CHEEZY SAUSAGE PASTA

If you crave something hearty with substance and plenty of flavour this is a dish for everyone to enjoy. This one is completely vegan, gluten-free and as always as natural as can be. We used chickpea pasta, but you could use regular pasta or another gluten-free alternative.



Time: Takes 30-35 minutes

Serves 3- 4 people.







You’ll need:

  • 1 packet of Syndian's cheezy kale and cashew sausages

  • 250grams of gluten-free pasta (we used chickpea)

  • 1 cup cashews soaked for approx 3 hours

  • 1 cup of plant milk (we use almond)

  • ½ bunch of fresh kale

  • ½ cup nutritional yeast

  • 1 tsp of turmeric

  • 1 tsp garlic powder

  • 1 tsp of mustard

  • ½ fresh lemon squeezed

  • ½ cup of water

  • 1tbsp of chickpea flour

  • 1 tsp of sweet paprika

  • 2 tbsp of oil

  • Salt and pepper

How to:

  • Heat your oven to 150 degrees Celsius and line a baking tray with baking paper.

  • Rip your kale off its stalk into pieces and place it on the tray. Drizzle and massage 1tbsp of olive oil onto the kale. We sprinkled a bit of nutritional yeast over the kale for a cheesy flavour. Bake for 10 minutes, tossing halfway through. Remove once crispy.



  • Meanwhile, slice your Syndian sausages into small bite-size pieces. Cook as instructed in a non-stick pan on a medium heat with a 1tbsp of olive oil. Keep tossing until brown and then turn off the heat.



  • Strain your soaking cashews. In a blender or food processor combine the cashews, plant milk, lemon, mustard, salt and pepper. Blend until smooth.

  • Heat a saucepan with boiling water and cook your pasta of choice as instructed.



  • Heat a saucepan to low heat and pour in your mixture. Add in your turmeric, nutritional yeast and chickpea (or any gluten-free) flour and continuously whisk for 2 minutes until combined. Be careful not to burn it.

  • Then add in your water and stir together for another 2 minutes until all combined. *If it’s too thick add in more plant milk. If you like it extra cheesy you can always add more nutritional yeast.

  • Strain pasta and mix in the cheesy sauce and pasta together.

  • Add some heat for 30 seconds to the sausages to get them warm up again and then pour on top or stir them into the pasta mix.

  • Serve with your kale chips and salt and pepper and sprinkled paprika.

Notes

  • Feel free to adjust the cheesy sauce to your taste desires. You can always add extra garlic or chilli depending on how you like it.

  • We suggest serving it with a fresh rocket salad too
